Roasted vegetables are a great way to get your little ones to eat their "5 a day". Babies love holding their food and feeding themselves and these are so easy (and clean!). Don't forget that potato chips are good too when just one of the vegetables and cooked in scrummy olive oil in the oven. You can roast most veg including onions, shallots, tomatoes, garlic, mushrooms and herbs. Here's my favourite roasted vegetables for babies.
Vegetables great for roasting
All root vegetables including;
potatoes
sweet potatoes
carrots
parsnips
beetroot (bit messy though!)
Other vegetables;
peppers, red ones are sweet and look great
Broccolli and cauliflower cut into baby handsized portions
butternut squash
Ingredients
Vegetables of your choice cut into chips
Olive oil
Olive oil
Method
Heat oven to 200C/180C fan
Peel and cut vegetables into chips. Roasted veg shrink when cooked so cut them fatter than the final size you want.
Grease a baking tray with olive oil and sprinkle oil on the veg. Using your hands toss the veg until all surfaces are covered evenly and arrange in a single layer.
Put into the oven for 30 to 45 minutes or until golden brown and soft in the middle. If you want really even roasting then turn vegetables half way through cooking.
They go great with my chicken and leek burger or my easy peasy sausages and beef burgers
