Slimming World Fish Cakes Recipe
I love fish and when I was looking for a quick way to use a tin of tuna I thought of fish cakes. Don't skimp on the fish. I use tinned tuna as I have it in the cupboard and it's already prepared but any strong flavoured fish will do, salmon, smoked haddock, mackerel. Just cook and flake while the potatoes are boiling. This goes well with salad but would also be great with lots of your favourite vegetables. I used a mixture of potatoes and sweet potatoes to give more flavour.
Slimming World Fish Cakes
Serves 2
Prep time 45 mins
Ingredients
1 tin of Tuna in water (or brine) drained1 medium boiling potato, diced
1 medium sweet potato, diced
2 Spring onions, finely sliced
Handful of fresh herbs e.g. chopped Parsley, coriander or dill
Salt and pepper
Low calorie spray, such as Fry Light, for frying
Method
Peel, and dice the potatoes. Chop into cubes and boil until soft. 10 - 15 mins depending on size.
Drain the tinned tuna well and slice the spring onions. If using fresh fish, flake into chunks and check for bones.
Mash the potatoes and stir in the fish, onions and chopped herbs.
Season with salt and pepper
Divide into four and shape into patties with your hands.
Spray a non stick frying pan with low calorie spray such as Fry Light and gently fry the patties, turning once, until golden brown. Approximately 8 mins each side.
Using tinned tuna can make these a little dry, they do not have any fat to moisten so serve with lots of vegetables, a fresh green salad or a delicious salsa.
