Slimming World Creamy Vegetable Pasta with Chicken, Mushrooms and Peppers.

I have been trying Laughing Cow cheese triangles in some meals and they are very versatile. I have used them instead of butter in ham sandwiches and instead of cream in pasta. This recipe uses the triangles to make the pasta creamy. This is an easy, fast and delicious meal great for a quick lunch or supper.

Prep time 5 minutes Cooking Time 10 minutes approx

To cook this in 15 minutes most of the preparation is done whilst the pasta cooks. I like my pasta soft and so cook it for a minute longer, about 10 minutes. If you like yours more al dente then follow the instructions on the packet. The vegetables can be changed to whatever you fancy. I just love chicken and mushrooms together and the flavour with the peppers and tomato is wonderful. I cook the broccoli, peas and sweetcorn in with the pasta, just to reduce the pots and pans but you could cook them separately.

Ingredients


120g Pasta
1 Chicken breast
4 Laughing Cow Light Cheese triangles
2 Tbsp Frozen peas
2 Tbsp Frozen sweet corn
10 Chestnut mushrooms sliced
Half a yellow pepper sliced
2 Sliced tomatoes
4 Pieces of Purple sprouting broccoli
Fry Light

Method


Slice the chicken breast and put to one side.

Boil a pan of water and add the pasta. Simmer and after 5 minutes add the broccoli.

Spray a frying pan with fry light and gently fry the chicken.

Whilst the chicken is cooking slice the mushrooms, peppers and tomatoes and add to the frying pan.

When there is three minutes left on the pasta add the peas and sweetcorn. Bring back to the boil and continue to cook. When cooked strain and remove the broccoli.

Melt the cheese in the hot pan. Put the pasta, peas and sweetcorn back into the pan and stir in the cheese until all is covered.

Serve on a warm plate with the fried vegetables and chicken. Enjoy.
