Slimming World Chip Shop Curry Sauce
If you are looking for a true Chip Shop Curry Sauce then you will be disappointed as the only place you really can get that is your chip shop. If you are looking for a delicious, easy Slimming World friendly Chip Shop Curry Sauce then try this. It is easy to make and really is delicious. This is adapted from a Slimming World on-line recipe.Slimming World Chip Shop Curry Sauce
Serves 2Prep time 10 minutes Cooking time 30 mins
Ingredients
1 medium onion finely chopped
1 large clove of garlic, crushed
1 cm fresh ginger, finely grated
1 tbsp curry powder
400g Tinned chopped tomatoes
60ml Vegetable stock
50g 0 fat Greek Yoghurt
2 tbsp Fresh coriander, chopped
2 tbsp Fresh mint, chopped
Fry Light
Method
Spray a non stick pan with Fry Light and fry the onions until they are translucent and soft. Most recipes say for "a minute or two" but Fry Light burns if too hot and I find it takes at least 10 minutes if not a little more. Fry gently while you prepare the other ingredients.
When the onions are soft add the garlic and ginger and fry for 1-2 minutes.
Add the curry powder and fry for another minute.
Add the tomatoes and bring to the boil. Simmer for 15 minutes.
Blend either in a food processor or with a stick blender. (The sauce can be cooled quickly and frozen at this stage.)
Add the fresh herbs and yoghurt. Reheat gently, do not allow to boil. Serve poured over grilled chicken and Slimming World chips. Yummy.
