Slimming World Pizza Chicken
OK so it's not pizza, it's chicken breast with pizza topping but is so easy and very delicious. We will definitely be having this again. We served it wth roast vegetables and cous cous.
Prep Time 15 mins Cooking Time 20 mins
2 Free Range Chicken Breasts
1 small red onion thinly sliced,
1/2 red pepper
1/2 yellow pepper
Half tsp dried oregano
Fresh chopped Basil or Oregano to garnish
MethodPre heat oven to 200C/180C fan
Butterfly each chicken breast by placing your hand flat on top of the chicken and slicing each horizontally almost completely through. It is easiest to start from the thicker end. Open out the breast and lay flat. Cover with cling film and bash with a rolling pin to make the thickness even.

Cover a baking tray with non-stick baking paper and spray with Fry Light.
Place the chicken breasts on the paper and spread tomato puree on top. Sprinkle with the dried oregano.
Cover the chicken with the sliced vegetables and bake for 20 mins or until chicken is cooked.
Sprinkle with the chopped fresh herbs to serve
This was really delicious and although not really a pizza the flavours are just so good. Feel free to change the topping to suit your taste. This recipe was adapted from Slimming World's new Free and Easy book.
