Slimming World Tomatoey Potatoes - Recipe

This is a family favourite, it makes boring boiled potatoes delicious and is great served with a green vegetable like broccoli and cold meats. It is also Syn free on Slimming world.

Serves 4

Prep time 10 minutes  Cooking time 35 minutes


2lb Waxy potatoes peeled and cut into 1.5" cubes
1 Tin of chopped tomatoes
1 tbsp tomato puree
1 large onion, peeled and chopped
1 tsp dried Oregano
2 cloves garlic, peeled and chopped
Fry light


Boil the potatoes for about 10 minutes. They only need to be par boiled. Strain.

Spray a saucepan with fry light and fry the chopped onions and garlic until softened, approximately 5 minutes.

Add the tinned tomatoes, tomato puree and Oregano to the fried onions and simmer for 10 minutes without a lid.

Add the potatoes and simmer for another 20 minutes, again without a lid as we want the sauce to thicken. Stir occasionally, but gently, to ensure all the potatoes get cooked in the sauce.

Season with salt and pepper. Serve with cold meat and green vegetables. 

These taste better if cooked slowly and the sauce is allowed to evaporate and become thickened. The times given are just guidelines.
