This is my second week on Slimming World and my first best recipe of the week.
This week I've been a little bit naughty, I know it's only week two but it was Grandads birthday on Friday and we went out for a meal. I couldn't find anything Slimming World friendly so I chose the next best thing. Sea Bass with mash, salad and peas. It was delicious. That evening I had two measured glasses of red wine. They were definitely worth the 6 Syns each. That wasn't all. We went out on Sunday for a family lunch, again to celebrate Grandad's birthday and I decided against the roast dinner as I was sure that would be full of Syns and chose instead a seafood risotto. Imagine my despair as it came out with a visible layer of oil. Oh well, I am sure it must have been lots of Syns but I only ate a little, it was very tasty though.
On to the weigh in. I lost 1 1/2lb and my waist stayed the same so I am on target. Only half a pound and I will have lost half a stone already.
I have been super good the rest of the week and my meals have been;

All chips have been Slimming World friendly and were cooked in the oven with Fry Light
Total Syns this week = 65 (bit of guesswork with the pub meals)

So what was my favourite this week. It was so simple Potatoes and Peppers. Just because it's easy don't miss this one, the recipe is from a book I have Slimming World Free Foods which is on offer at the moment from The Works costing £7 (RRP £16.99).
Best Recipe of the Week
Chipped Potatoes With Peppers
serves 4 preparation time 10 mins cooking time 35 minutesIngredients
1kg Potatoes Desirée
Red and Yellow Peppers sliced and deseeded
Fry Light Olive Oil or other low cal oil spray
Method
Preheat the oven to 240C
1. Peel and chip potatoes. Boil gently for 4-5 minutes. Drain carefully.
2. Spray a baking tray with Fry Light Olive Oil spread the potatoes on the tray. Spray again. Place in centre of oven and cook for 10 mins add the peppers and cook for another 15 mins or until golden brown
3. Enjoy
The boiling of the potatoes makes them crispy on the outside and the addition of the peppers add flavour and moisture to the dish. The original recipe suggests breaking an egg per person over the cooked dish and putting back into the oven for 5 - 6 minutes. If you like eggs this would be yummy.
I am pleased to have lost more this week and now need to up my activity to help boost the weight loss. Anything over half a pound next week will have me dancing as I will have lost half a stone, and most of the time I don't even feel like I'm on a diet.

Love the idea of chips with peppers. Looks yummy! Sounds like you are doing really well on the plan so far. It is frustrating when you eat out and think you have something healthy and they add loads of oil or dressing to it. x
