Peanut butter and banana muffins |
Bear loves the apple, carrot and banana muffins that I make but I wanted to make something different for him. I still wanted them to have fruit and to be sugar free but couldn't find exactly what I wanted on the internet so I adapted a peanut butter and banana recipe.
The original recipe is from Tesco realfood. Just in case he didn't like them, or worse the recipe didn't work, I reduced the recipe and slightly changed the ingredients.
I exchanged the sugar for a grated apple and used smooth peanut butter instead of crunchy.
The muffins are freezable.
Ingredients
125g self raising flour
1/2 tsp baking powder
10g oats
1 small apple, grated
1 ripe banana, mashed
50g smooth peanut butter
1 egg
10g melted butter
75ml whole milk
Method
Preheat the oven to 200C
Sift the flour into a large bowl. Add the baking powder and oats and stir gently to mix.
In another bowl whisk the egg. Add the milk, butter, peanut butter, mashed banana and grated apple.
Mix together.
Add to the flour mixture and stir gently until combined. Do not over work at this stage or they will not rise as well.
Divide equally between 6 muffin cases.
Bake until golden brown approx.15 to 20 minutes. Cool on a wire rack. Light and delicious baby friendly muffins.
