The Perfect Slimming World Baked Potato With Spring Onion and Cheese - Recipe



To make the perfect Slimming World Baked Potato is not difficult. Just buy large potatoes, floury not waxy potatoes, and bake. What could be easier? To make it fluffy on the inside and crispy on the outside you need to add a little more. Although it is possible to cook potatoes in the microwave I find they shrink and go rubbery if over cooked just a little. For the best baked potato cook it in the oven.



Serves one Prep time 10 minutes Cooking time 1 - 1.5 hours

Ingredients


One large baking potato such as Desiree or Maris Piper
30g cheddar grated (Healthy extra)
1 spring onion chopped finely
Salt
Small tin of baked beans (optional)


Method


Heat the oven to 200C

Scrub the potato well, even if it is prewashed, be extra diligent making sure the mud is removed from the eyes

Prick the potato with a fork a few times on both sides.

Put in the middle of the oven directly onto the rack. Do not use a baking tray or anything else.

Cook for about an hour, if the potato is large it may need 15 minutes more. Check the potato is cooked with a skewer. It should pierce the potato easily.

When cooked, cut the potatoes in half and being careful not to get burnt (I hold the potato in a clean T towel). Then scoop out the soft inside into a bowl. Mash with a fork. Season with a little pinch of salt.

Add the spring onion and most of the cheese and mix thoroughly. Replace the potato in the skins and put back into the oven for 10 minutes.

Whilst the potato is reheating, warm the beans.

Serve the potato with the rest of the cheese sprinkled on top an the beans on the side.

  2. Hi Cardigan, I do enjoy a nice baked potato, which isn't as often as I like as decent potatoes for baking isn't so easy here. I like the idea of removing and mixing the potato with a filling, it would make it nice and fluffy. I will be giving it ago for sure next time I do them.
